Our cuisine brings together the roots of Europe (and beyond) and the routes that have shaped them over centuries.

Regional folk traditions re-imagined – simple, honest, local, and inspired by the traces left by traders, herders, alpine pass travellers, sailors, and countless other wanderers.

Nimaya - Indian Cuisine

The restaurant Nimaya adds another culinary journey. When the Scuol Palace opened in 1864, guests from the British aristocracy were among its most prominent visitors—at a time when India was part of the British Empire. In those years, cuisines, spices and techniques travelled across continents with people. Today, this movement continues: head chef Pranav Yogesh comes from India and brings his cooking to the Engadin. Nimaya thus marks another stage along the routes that connect cultures, history and flavour.

Ustaria Palazi - Roots and Routes

Folk cuisines across Europe (and beyond) have always been linked — by mountains, trade routes, migrations, and shared histories. “Roots” stands for origins and traditions, old recipes and hearth fires, rural techniques, our ancestors and the stories they left behind. “Routes” are journeys: alpine passes, rivers, merchants, travellers, ideas and ingredients that move and transform. Our cooking brings the two together: rooted in local traditions, shaped by the routes that connect Europe and the world. We re-imagine the simple, rural dishes of Europe (and beyond) — not through gimmicky fusion, but through authentic kinship and the natural dialogue of connected cultures.
